Salsify peelings

Salsify are grown for human consumption. After harvesting, the salsify are immediately processed in the factory. Upon arrival, the product is washed and then peeled. The rind and part of the sugar layer (directly under the rind) are removed by means of brushes. At the end of the process, the skins are homogenized into liquid salsify. The high pH value is caused on the one hand by the product itself and on the other hand by a minimal use of lye during the processing process. Salsify peels are rich in sugar, the sugars are easily absorbed, so that the biogas is released relatively quickly.
